Bake: Preheat oven to 425F. Season the cod with salt and pepper and place in a glass baking dish rubbed with cooking oil. You can also line a piece of aluminum foil on a baking sheet and place the fish on top. Bake until fish is flaky and reaches approximately 145F, 12-14 minutes, depending on the thickness of the fish.
Pan Sear: Season the cod filets with salt and pepper. Heat a tablespoon of olive oil a nonstick skillet over medium-high heat. Add fish; sauté 5 minutes on each side or until fish flakes easily when tested with a fork. Remove the fish, and consider making a pan sauce with capers, butter, parsley, and a splash of white wine.
